Roast potatoes are a delicious and essential component of a good winter dinner, but making them taste perfect can be hard. You might find that your roast potatoes are often a bit dry or not very crispy, but there's an easy way to make them better than ever before.
Nothing says Sunday roast quite like a tray of perfectly crispy roast potatoes - the more golden and fluffy you can make them, the better. Serious Eats says the key to a perfect roast potato is all in how you season and flavour them.
It says: "I decided to heat up the solid aromatics (minced garlic and rosemary are my favorites) in some olive oil, cooking them just until the garlic started to turn golden, then strain it, separating the infused oil from the solids.
"That way, you can use the flavored oil to toss with the potatoes, building in plenty of flavor, and add back the garlic and rosemary (along with some minced fresh parsley) at the end. Best of both worlds."
It adds that you end up with roast potatoes that have an incredibly crisp crust, with plenty of textural variety and lots of microscopic nooks and crannies for flavorful bits of garlic and herbs to plant themselves.
The potatoes will be "the greatest roast potatoes you'll ever make", it says.
While it might be easy to forget this crucial step, your roasties will taste completely different and even more delicious.
Whether you're making this meal for yourself or to serve friends or family, you'll create an unforgettable dinner that you'll be desperate to cook again.
That's it - one simple step that transforms your roasties into some of your best ever.
Next time you're in the kitchen, don't forget to give this recipe a go.
